Downtown restaurant Hummus Republic has recently opened a second location in the former Wahoo’s spot next to GB3 on Palm & Nees. If you’re looking for something flavorful to eat, at a place that allows you to customize a meal based on your preferences, specific dietary needs, or you prefer a plant-based meal, you’ll really enjoy this place.

Hummus Republic is a fast-casual modern-Mediterranean restaurant offering diners three major meal types – a pita, a wrap, or a bowl – that can be filled with the base, protein, toppings, and dressings of choice. Each meal is of generous size (the bowl I ordered came with a pita on the side and was easily large enough to make up two meals for me) and runs about $13.
Each menu item can have a base of couscous, garbanzo beans, spinach, kale, or mixed greens, followed by up to three hummuses or spreads including zesty feta or tzatziki. The next choice is of a protein. Options include three different meats — Moroccan steak, lemon chicken, or chicken shawarma — as well as three vegan proteins — vegan plant-based “beef”, falafel, and mushroom shawarma.
The topping selection is extensive and unlimited toppings are included in the price of the meal. Pickled red cabbage, beets, cucumbers, tomatoes, red onion, Kalamata olives, tabbouleh, fresh chopped herbs, and crumbled feta make up the cold topping choices. The hot toppings are amongst the most interesting and least common choices I’ve seen anywhere locally, and they add a lot of flavor, texture, and crunch to a meal. Options include chickpea croutons, fried jalapenos, stuffed grape leaves, hard-boiled eggs, fried eggplant, and my personal favorite — street mix — a blend of thinly sliced and crispy fried onions, jalapenos, and olives.
Finally, each meal comes with dressings and sauces of choice. Options include Moroccan hot sauce, traditional tahini, roasted red pepper tahini, “grandma’s hot sauce”, and my two personal favorites, olive oil lemon and jalapeno garlic. Hummus Republic is generous with their sauces and will offer you additional sides if you ask.

In addition to the main meal options, the restaurant also offers some specialty sides like sweet potato waffle fries, and street style waffle fries, loaded with flavorful toppings and spices, pita chips, falafel, and a falafel burger.
The entire restaurant is setup similar to a Chipotle in that you order at a counter, choosing your ingredients one by one, then you request any desired sides and drinks at check out and seat yourself. The drink selection includes a specialty soda fountain and a variety of fresh, infused lemonades. I had the turmeric ginger lemonade, and it was delicious and refreshing. There is abundant patio seating, as well as ample indoor seating, and when I visited the restaurant felt very clean, airy, and bright.

Hummus Republic offers online ordering as well as delivery options, and it’s North Fresno location is open from 10am to 10pm Sunday through Wednesday, and 10am to 11pm Thursday through Saturday.
