I season a room-temperature filet with sea salt and pepper and place it in the oven until it reaches an internal temperature of 125-130 degrees. In the meantime, I prepare an oiled pan on the stove with rosemary, thyme, and crushed garlic. Once the steak is out of the oven, I use tongs and sear it in the hot pan, basting it in a little butter. After, I let the steak rest for five minutes before adding a little finishing salt to it. I’ve made this for clients who have told me, ‘There’s no way this steak was made in my house!’ 9 times out of 10 the perfect dish can be made anywhere. It’s about skill, not equipment.“
