Melted cheese. It’s the best, isn’t it? I’d say it’s tied for most irresistible food along with maple bar donuts for me.
So, when a new restaurant specializing in gourmet quesadillas opened up within ten minutes of my office, you know I had to make the trip over promptly.
About Quesadilla Gorilla
Two weeks ago, Quesadilla Gorilla opened the doors to its second brick-and-mortar location, this time in Fresno, located on Echo Street across from Fresno High and next door to Ampersand Ice Cream.
Its first location opened in October, 2013 in Visalia next to the historic Fox Theater. Owners and “Chief Dilla Makers” Miguel and Mikayla Reyes also operate the Quesadilla Gorilla food truck, which can be found at various events throughout Visalia and Fresno, including farmers markets, Computech, and Gazebo Gardens. The Reyeses pride themselves in preparing delicious, gourmet quesadillas made with high-quality, locally sourced ingredients – they seek to serve all customers as they would their own family. From homemade salsas like their “Liquid Gold” – a spicy chile and garlic salsa with a great kick – to their creamy avocado and cilantro cream sauces, the Reyeses and their team know how to take a quesadilla way beyond tortillas and cheese, and turn them into an experience.
The Dillas
When you order your food at Quesadilla Gorilla, you have the option of requesting a suggested combination of ingredients from their pre-stacked deck of quesadilla choices, or using a menu pad to individually select your protein of choice (or veggies), toppings, cheese, and sauces.
Protein choices include cilantro lime chicken, shredded beef, chile verde, and bacon. There are two types of cheese to choose from (a white mix of Jack, provolone, and mozzarella, or cheddar), and fillings, which include black beans, pico de gallo, cilantro, tomatoes, onion, habaneros, fajita veggies, and rice.
And the real stars, the sauces, include Cilantro Cream, Roasted Sour Cream, Spicy Salsa Verde, Habanero Salsa, Roasted Red Salsa, Avocado Salsa, and the aforementioned Liquid Gold.
All quesadillas come with two homemade sauces of your choice. Personally, the Liquid Gold and Cilantro Cream have been favorites of mine.
Finally, there are a few dessert quesadillas on the menu to choose from as well, such as the PB&J and the Nutella.
Though I love the idea of being able to build my own quesadilla to taste from the many mouthwatering options provided, both times I’ve been to Quesadilla Gorilla in the two weeks since they opened in Fresno, I ordered a pre-selected quesadilla, the “Evan Boling,” which comes with delicious, marinated chicken, bacon, thin-sliced fresh jalapeños and a mixture of white cheeses.
It’s SO good. I’m going to have a hard time not ordering it, next time I go – I know I need to branch out, but it’s that good!
The Restaurant
Quesadilla Gorilla is located in the former Dusty Buns restaurant location, though they have made some changes to the interior paint and appearance.
The atmosphere is modern, clean, and somewhat reminiscent of a Chipotle with its white and wood-accented, minimalist décor. The service is friendly and helpful, and ordering is counter-style, but your food is brought to your table.
If you strongly dislike quesadillas in general (I don’t understand this, but I respect your right to your own opinion, however strange it is), Quesadilla Gorilla is not the spot for you, as the entire menu is filled with tasty “Dillas.”
But, if you’re like most people and love flavorful, cheesy, and non-greasy tortillas filled with deliciousness, you should definitely put Quesadilla Gorilla on your list of awesome Fresno places to visit soon!
