Wafflicious is a new Fresno-based food truck serving up delicious, custom-made waffle creations, and it’s out to prove that waffles aren’t just for breakfast anymore. I recently had the chance to speak with co-owner Allison Riggin to find out all about her amazing waffles and what Fresnans should know about the new taste sensation in town.
Belgian vs Liege waffles
Wafflicious was started by John Diaz and Allison Riggin, a brother and sister-in-law duo who’ve been interested in entrepreneurship for years, but were awaiting the perfect business idea. John is known as the expert waffle-topper (and business-minded half of the pair) and Allison is the waffle chef extraordinaire. Both John and Allison are locals, having grown up in Fresno and attending Buchanan High School.
Last January, John and Allison served their specialty waffles to family and friends at a party and got such great feedback, they realized they had their unique business idea. Plans began to form in spring of 2017, and on November 12, 2017, the Wafflicious truck served its first customers. The pair plans to always have their mobile trailer, though John and Allison would like to one day expand into a brick-and-mortar location.
Wafflicious offers two different kind of waffles: the Belgian and the Liege. “Belgian is a typical fluffy waffle that most people are familiar with. Our Belgian is made with a light whipped batter to give it our signature fluffy-on-the-inside, crispy-on-the-outside texture combination,” says Allison. “The Liege is made from a yeast-risen dough and has a more dense, flaky texture.” Upon request, Wafflicious offers a gluten-free Belgian waffle, and Allison is currently working to perfect a gluten-free Liege recipe as well.
I hadn’t heard of the Liege waffle prior to trying one from Wafflicious last month, but it is truly delicious! Sweet, yet not overly sweet, dense yet not heavy. Allison explained that Liege waffles have been popular in Europe for years and they’re just starting to gain attention in the U.S.
All about toppings
Wafflicious offers a ton of topping choices, and you can choose any combination you like. The most popular combinations are strawberry and cake batter, strawberry and Nutella, and the savory waffle, which comes with egg, cheese, bacon, and avocado.
I couldn’t resist asking about the most surprising topping combination request they’d received so far. Says Allison, “We had one order for strawberries, bacon, Nutella, and whipped cream! But, for the record, we fully support mixing sweet and savory for those who like that sort of thing.”
And, just in case amazing waffles with an endless combination of topping choices aren’t enough to get your taste buds tingling, Wafflicious also offers beignets (light fluffy french donuts covered in powdered sugar).
