Last weekend, I went out of town and I ate the way everyone eats when they’re on vacation: like every meal is my last. Unsurprisingly, when I got home, I felt pretty crappy.
I needed to get a huge dose of vitamins and other good junk into my system pretty quickly, which is not easy for me since I loooove fast food and haaaate anything that isn’t fast food. So, I made a smoothie.
A kale smoothie.
Yeah. I’m right there with you. Kale is the worst. The worst. It’s a super food, so I should be eating it often but honestly, most days I’d rather die than eat kale, even when it’s baked and salted. (Kale chips are not chips — please stop trying to convince me they’re worth eating.)
But here’s the thing about being a grown-up: We know what will make us feel better, and sometimes we just have to suck it up and do it.
So I’ve found a way to eat kale without wanting to die and/or vomit. It tastes good and it makes me feel better right away — a total win.
Next time you’re feeling plugged up or run down, try this. (As with all recipes, feel free to play around with the measurements and ingredients.)
Kale Banana Smoothie
1 cup unsweetened almond milk
1 tbsp peanut (or other nut) butter
1/3 to 1/2 bunch of kale leaves (find it at a farmers market near you)
1 frozen banana (peel and stick it in a bag in the freezer for a few hours first)
Pour the almond milk into a blender and add the peanut butter. Cut the kale leaves from the ribs and add to the blender (throw away ribs). Slice the frozen banana carefully and add to the other ingredients. Then blend, baby.
This kale smoothie is sweet, it’s delicious, and thanks to the PB and banana, you can’t taste the kale at all. It’s definitely a great way to trick yourself into getting some vitamins and fiber.
