I’m working my way to becoming more of a full-time Paleo person and recipes like these sure make it easier. They are great whenever you need a little something sweet.

1 large ripe banana
½ cup almond flower
1 red apple peeled and cubed
3 large egg whites
1 large egg
2 tbsp. of honey
2 tbsp. flax seed
½ macadamia nuts chopped
108 raisins 3 for each one of the mini muffins.
Cinnamon to taste

Grab your trusted blender, add eggs, honey, and banana and begin blending. Once the mixture is smooth add apple cubes then blend again till smooth. Then add almond flour, flax seed, and cinnamon (to taste).
Spray mini muffin pan with pam and spoon mixture in till a little less then full. Sprinkle macadamia nut and 3 raisins to the top. Bake in oven at 350 for 15 to 17 min. You should get 34 or 36 mini muffins. You can reduce calories by eliminating nuts and flax, but you lose a lot of the heath benefits they provide.
These are yum and 100% paleo.
Calorie per muffin 40.7

Big thanks to my friend Elida Gonzalez for this wonderful recipe!

Anybody who has ever lived in Fresno knows that next to the community itself, the next best thing about living here is the location. Being less than three hours away from most any place a person would ever want to ‘get away to’ is truly wonderful!

For me it’s been too long so I have planned a trip for this coming June. Yes, I am one of those handsome men in the photo. I encourage you to do the same.

Well, if you are looking to get away and you want a unique summer adventure, look no further than a day trip of whitewater rafting on the Kings River!.

Prior to my first trip, I thought river rafting was only for the adventurers who thrive on adrenaline rushes, and while a Class 5 river may offer that, the Kings River is a Class 3 river that is perfect for beginning to intermediate rafters.

The Kings River is located at the border of Sierra and Sequoia National Forests; it’s famous for its long, exhilarating roller coaster- like rapids. The typical season is from May through July but if you plan a trip for March through early June you should keep in mind that it is a natural snowmelt river, and can be very cold at that time. Early season rafters often wear wetsuits, which are available to rent from most tour companies. My experience, great by the way, has only been with Kings River Expeditions but you may be able to find other options searching the internet.

Seriously folks if you have never been white water rafting, treat yourself to the experience. There is nothing like observing nature while floating down a river…
Ok, well maybe the ‘we did it’ moment after negotiating down a series of rapids is a close second!

I confess! While I was at P*de*Q I took notice of my favorite Food Truck’s new permanent location at 608 E. Weldon and made plans to dine there soon. Well soon came last night and I am happy to report here that the quality you have come to expect from them is fine and well at their first physical location. We both had The Dusty Bun-* Organic chipotle roast Mary’s chicken, with sesame carrot slaw and they were delicious. The new location is spacious with comfortable seating and on this night a local singer/musician kept us entertained while we enjoyed our meals. You can get your meal to-go but be sure to bring cash as they do not accept credit cards at this time.

I had the pleasure of biting into one of these delicious tapioca-based cheese breads a few months ago at an event CRU Wine Company was holding. Since then, unsure where I could find them, I was deprived… until now! Yesterday morning after getting my vehicle serviced at VanNess Auto (more on them soon) I decided to go for a quick drive around one of my favorite neighborhoods, Historic Fresno High when it happened, P*de*Q live and in living color, on their very own corner. You can taste these crispy on the outside, warm and spongy on the inside Brazilian treats at 1940 N Echo (at VanNess) Monday thru Wednesday 7am till 5pm, Thursday thru Friday 7am till 6pm and Saturday 8am till 1pm. I suggest them for breakfast with a cup of coffee from Cafe Corazon!

When you see hundreds of homes in a year you are bound to see some strange things from time to time. For instance, recently while showing a fixer upper in historic Fresno High, my client peeked around the back of the garage and immediately let out a “whaaaat?”. Of course I knew it had to be good so with iPhone camera in hand I rushed back to meet him and snapped the picture of the tombstone you see above. Yes a tombstone placed in an area that what was somewhat shaped like a grave. My client decided to pass on this one… If all other things were to your liking, would you buy or would the tombstone turn you away?

Looking forward to sharing more ‘whaaaat?’ pics soon!

A swede? Today I think many of you know exactly what I’m asking about; if not, after reading this you should at least have a sense of the growing movement created here in Fresno known as Swede Fest.

Swede Fest was founded in 2008 by two of Fresno’s most creative, Roque Rodriquez and Bryan Harley. The free event takes place twice a year, the next one being this May. Swede Fest is an opportunity for aspiring film creators to show off their 4-5 minute unique take on a Hollywood movie or TV show. The name “swede” comes from the movie Be Kind Rewind (starring Jack Black and Mos Def), where two bumbling store clerks inadvertently erase the footage from all of the tapes in their video rental store. In order to keep the business running, they re-shoot every film in the store with their own camera, with a budget of zero dollars.

Swede Fest has garnered a lot of attention as of late, with reviews and commentary on tv and the internet; including those from director Jon Favreau, actor Tom Hiddleston. I had the opportunity to speak with co-creator Roque Rodriquez about the movements continued success, “The last Swede Fest set the bar very high. With a record turnout and national media attention, we’ve had to step our game up and the things we have set in motion for the next festival are going to be awesome for all the participants and attendees! Keep checking www.swedefest.com for the latest info and keep the month of May open in your calendar book”.

I have had the privilege of attending 6 of the previous 8 but if you want to get all caught up before Swede Fest 9 you can head on over to their website, pop some corn and enjoy such blockbusters as La Bamba, The Princess Diaries, Speed, Raiders of the Lost Ark, Top Gun, Seven and many more!

See you at the movies,

Jason

There is something magical about the moment a Realtor gets to hand over the keys to a home. Perhaps as magical as that memory you may have of the key you got when you first went to Storyland. Surely you recall using it to hear the story of the Three Little Pigs and other childhood fairy-tales?! Was yours purple, red, or yellow? Perhaps it was blue like mine. Rumors are that a special limited edition gold key will be available soon to celebrate Storylands 50th anniversary!

Storyland opened a few years after Playland, on May 19th 1962. It immediately captured the hearts and imaginations of children across the valley. For those of you who may be new to the valley, Storyland is a walk-through park of Mother Goose stories and nursery rhymes, including classics like Jack and Jill, Goldilocks & the Three Bears, Peter Pan, Humpty Dumpty and more! It is located next door to Playland, a small family amusement park with 13 rides. Some of my kids’ favorites include the famous Willis B. Kyle Express train, the Big Rocko ferris wheel, and the thrilling Octopus ride. During the summer months Splash Junction provides a fun way to cool off!

While Storyland remained opened this winter, Playland re-opens from winter break this month on February 11th 2012. Both are located inside Roeding park at 890 W. Belmont Avenue. For more information, pricing, and hours of operation check out their website at http://storylandplayland.com

When is the last time you visited either park? While the nostalgia remains so much has been changed and added to over the years. Make a point this spring of bringing back some childhood memories and creating some new ones by visiting this historic Fresyes landmark!

See you on the train!

I know what you’re thinking… who could really need such a large home? The answer is, ‘maybe you or someone you love’. No this home isn’t for sale, the above was my semi-clever attempt at getting your attention so I could tell you about a huge FresYES… Terry’s House!

It’s natural and encouraged for families and loved ones to be bedside as the patient recovers, but being far from home can make it difficult for loved ones to stay strong themselves. Many can’t afford hotel rooms and restaurant meals for long stretches of time; That’s where Terrys’ House comes in. The house is located across the street from Community Regional Medical Center and has all the amenities of home for the families of those in need; Including private baths, phones, refrigerators, computers with internet, exercise rooms, and an activity room with books and games to help children stay occupied.

In addition and probably more importantly there are people at the home who extend a hand to guests in becoming familiar with the neighborhood, help make travel arrangements, get groceries, and provide assistance wherever it may be needed.

While researching Terrys’ house I spoke with various medical providers that told me that there is an improved patient outcome when they are surrounded by people they know, trust, and love. That It not only reduces patients’ anxiety and stress, but it also reduces their sense of isolation, confusion, and loss.

This month Terry’s House is celebrating its 1 year anniversary of providing a home-away-from-home for families of patients in critical condition. Terry’s House is entirely dependent on charitable contributions and those who donate do so in variety of different ways. Some donate a gift in kind like food coupons or daily necessary household items for those in residence. If you feel so inclined in this new year please give them a call at (559) 459-2670 or email House Manager Denise Goodman at dgoodman@communitymedical.org
